Makes 30-40 cookies

1 C WWW flour

1.5 C flour

1t baking soda

½ t salt

1 C butter

2 C sugar

2 eggs

1 T vanilla

1 12oz. bag choc chips

1.5 C oats

2 T finely ground coffee

Combine flours, baking soda, salt. In mixer, cream butter/sugar. Add eggs and vanilla. Add flour mixture in small additions. Add oats until consistency is good. Add coffee, again to a good consistency. Add chocolate chips.

Drop on lined cookie sheet—golfball sized (or a bit larger). Flatten slightly and add a sprinkle of sea salt or coarse kosher salt to top. Bake at 375 for 13-15 minutes. (Fifteen minutes works perfectly for very large cookies–which also have the best consistency. But if you prefer to make smaller cookies, reduce the cooking time to prevent burning.)
